Place in crock pot:
1 beef roast
salt and pepper rubbed on roast
4 bouillion cubes
1 chopped onion
1 can diced tomatoes and 1 can water
Cook until meat shreds easily.
Heat 1 can black beans with some green salsa if you have it on hand. We use "herdez" salsa verde.
Prepare your favorite rice. (we like calrose and basmati)
Pour the hot rice onto a large serving platter. Drizzle olive oil or melted butter on the rice. Next spread beans evenly over the rice. Place the shredded beef on top. We often eat this with plantain chips and chimichurri.
